These are so easy to whip up and have great flavor!! DH usually makes a funny face when I say enchiladas, but when I said it is similar but with pasta he was excited and this did not dissapoint!. I used Pace Picante mild salsa and a mild taco sauce. I didn't measure the cheese, just sprinkled on what I thought was a good amount. I did get 16 shells from the meat filling and looking forward to leftovers!! Made for AUS/NZ Recipe Swap #60.

I found this recipe on Pinterest and then came and dug it up here on Food.com... these were a huge hit! I threw in a little chorizo that I had with the ground beef just to use it up. I followed the recipe exactly except that I just threw the cheese on top and baked uncovered at 350 for 30 or so minutes. I made it for us and for a friend who just had surgery and her family loved it too!
Very easy to make and very tasty!!! I used refried beans instead of cream cheese, and pace picante sauce. Was very good with refried beans!
I used a homemade taco sauce recipe which I think made a huge difference! I also added diced red onion and green chiles to the ground beef while it was cooking, and only used half of the cream cheese (because that's all I had left). The green chiles kept the mixture from becoming dry and it was really spicy, which I love. Really simple, tasty recipe!
Pretty good dish! Bf liked a lot. I believe he ate 7 shells total. We had with french bread.
