- 6 cups frozen corn, thawed and drained (about 30 ounces)
- 1 cup mayonnaise
- 1 teaspoon ground chipotle chile pepper
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 6 tablespoons green onions, chopped
- 1⁄2 cup parmesan cheese, grated
directions
- Preheat oven to 350°.
- Mix first 5 ingredients and 4 tablespoons green onions; transfer to a greased 1-1/2-qt. baking dish. Sprinkle with cheese.
- Bake, covered, 20 minutes. Uncover; bake until bubbly and lightly browned, 15-20 minutes. Sprinkle with remaining green onions. If desired, serve with lime wedges.
