A great after school snack.
- 2 slices cooked ham
- 1 flour tortilla
- 1 tablespoon butter
- 1 egg, beaten
- 2 tablespoons shredded cheddar cheese
- 1 tablespoon chopped onion
- chili powder, to taste
- Overlap ham on tortilla. Melt butter in a small skillet. Place tortilla with meat in skillet; top with egg, cheese, and onion. Cover skillet with lid and cook over medium low heat 5 minutes or until egg is set. Sprinkle with chili powder and fold in half to eat.
I made this for breakfast and my boys and I enjoyed it. I followed the recipe as written other then I tripled it for the three of us. Made for Fall PAC 2009.
Very nice! I made this for lunch this afternoon and used thin sliced deli turkey instead of ham but otherwise followed your recipe. I also used a multi-grain flour tortilla to add extra nutrition. Thanks for posting!
YUM-O! This IS a great after school snack, even for teachers like me. :) I used a (burrito size) Jalapeno-Cheddar tortilla, leftover scrambled eggs, 4 slices of deli-style ham and a little more cheese than called for. This made a wonderful lunch after watching 3 1/2 hours of my nephew's baseball game. Thanks for sharing, tweetyfan! **Made for Spring PAC 2008**
