A delicious mexican side dish -no meat-no fat low in carbs -high in fiber and nutrients.

Ingredients Nutrition

  • 4 cups tomatoes (i use 2 cans rotel)
  • 1 cup corn
  • 1 jalapeno, diced
  • 1 cup kidney bean, drained
  • 1 onion, diced
  • 14 teaspoon cumin
  • 14 teaspoon chili flakes
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • 2 tablespoons oil


  1. In a large skillet-heat oil and saute fresh jalapeno with onion,cook till soft-add rest of ingredients and simmer 30 minute.

Delicious! We plan to try this as a soup with pork sausage or chicken added. Could also put vermicelli in to thicken it up and keep it meatless. Thanks!

This was very easy and tasty...I think you could just as easily serve this cold...This is a nice change for a Mexican side dish...we enjoyed it with our tortilla's and carnitas...thanks for posting it...made for "Help a Naked Recipe" tag game for recipes without a photo...:)
