ingredients
- 2 oranges, peeled and diced
- 2 medium tomatoes, seeded and diced
- 1 cup frozen corn kernels, thawed
- 1 cup frozen peas, thawed
- 4 tablespoons red onions, minced
- 6 tablespoons Italian dressing
- 2 tablespoons fresh lime juice
- salt
- pepper
- 2 tablespoons cilantro, minced
- red leaf lettuce
directions
- Combine first 5 ingredients in medium bowl.
- Blend dressing and lime juice.
- Season with salt and pepper.
- Add to salad with cilantro and mix.
- Line plates with red leaf lettuce.
- Mound salad on lettuce.

I'm always looking for healthy low fat recipes. I have a pet kitty who loves to lay on my desk while I'm on the computer. She gets much bigger she won't fit.
