Ingredients Nutrition

  • 2 cups brown rice, raw
  • 4 cups water
  • 2 cups cubed cooked chicken
  • 2 cups enchilada sauce
  • 1 red pepper, diced

Directions

  1. Cook brown rice and water according to pckg directions.
  2. Add the red pepper and enchilada sauce; stir and cook for
  3. 5 more minutes.
  4. Then add the chicken and cook for 5 more minutes.
