ingredients
- 1 frozen pie crust, I use organic whole wheat
- 5 large eggs
- 1 cup half-and-half
- 1 cup shredded monterey jack cheese
- 1⁄2 cup shredded Mexican blend cheese
- 1 (4 ounce) can of chopped green chilies
- 1⁄2 cup diced cooked ham
- 1⁄2 teaspoon kosher salt
- 1 pinch black pepper
- 1 pinch of ancho chili pepper
directions
- preheat oven to 375 degrees.
- in a bowl, add 5 eggs, half and half and mix well.
- blend in green chiles, cheeses and ham, incorporate well.
- add salt, black pepper and Ancho Chile pepper.
- Stir well and pour into piecrust.
- cover piecrust with foil and bake 40 minutes and take off foil and bake an additional 15 minutes til center is done.
- serve individually with dollop of sour cream if you like and sprig of cilantro for presentation.
