Mexican Pasta

- 3 tablespoons olive oil
- 1⁄2 cup diced red bell pepper
- 1⁄2 cup diced sweet onion
- 1⁄2 cup snow peas, cut into 1-inch chunks
- 2 ready to serve sausage patties, cut into small cubes
- 8 ounces rigatoni pasta
- 15 ounces old el paso cheese n salsa
directions
- Cook Rigatoni according to package directions. Meanwhile, heat skillet on burner and add olive oil.
- Add the bell pepper and onion.
- Saute for a couple of minutes and then add the snow peas.
- When snow peas are bright green, add the sausage cubes.
- Cook till all is heated through and the veggies are tender but not soggy.
- Drain the pasta and stir in the Cheese n' Salsa.
- Add the veggie and sausage mix.
- Stir and heat through.
- Serve immediately.
- I served this with thick slabs of bread spread with garlic butter, sprinkled on cilantro flakes and baked in 400 degree oven for 5-7 minutes.

I love to cook and read cookbooks like others read novels. I especially like recipes that look like I spent a day in the kitchen but really only took a little of my time. I guess that comes from so many years in the kitchen plus I am a Cosmetologist in Florida and after the "season" (when the snowbirds are down) it takes me a while to re-coup. I love this site as I can type an ingredient in and find all kinds of recipes. With my busy schedule, I don't have as much time to spend in the kitchen as when I was a full time "Domestic Engineer".
Besides working in a shop, I am a Minister's wife and we are in the process of "planting a church" in our area.
I have 3 grown children and 19 grandchildren. The first was married in May so I guess it won't be long before I will be a ggrandmother. It amazes me how they are all growing up but I am not getting older! :-)
