Mexican Pasta

"I needed something for dinner in a hurry. After looking at what was available, I created this dish. It came out so good that I wanted to share it and see what the cooking community thought. I used the "mild" cheese n' Salsa but you can "spunk" it up to your personal taste with the hotter mix and/or jalapeno pepper"

  • Cook Rigatoni according to package directions. Meanwhile, heat skillet on burner and add olive oil.
  • Add the bell pepper and onion.
  • Saute for a couple of minutes and then add the snow peas.
  • When snow peas are bright green, add the sausage cubes.
  • Cook till all is heated through and the veggies are tender but not soggy.
  • Drain the pasta and stir in the Cheese n' Salsa.
  • Add the veggie and sausage mix.
  • Stir and heat through.
  • Serve immediately.
  • I served this with thick slabs of bread spread with garlic butter, sprinkled on cilantro flakes and baked in 400 degree oven for 5-7 minutes.

I love to cook and read cookbooks like others read novels. I especially like recipes that look like I spent a day in the kitchen but really only took a little of my time. I guess that comes from so many years in the kitchen plus I am a Cosmetologist in Florida and after the "season" (when the snowbirds are down) it takes me a while to re-coup. I love this site as I can type an ingredient in and find all kinds of recipes. With my busy schedule, I don't have as much time to spend in the kitchen as when I was a full time "Domestic Engineer". Besides working in a shop, I am a Minister's wife and we are in the process of "planting a church" in our area. I have 3 grown children and 19 grandchildren. The first was married in May so I guess it won't be long before I will be a ggrandmother. It amazes me how they are all growing up but I am not getting older! :-)
