Super filling recipe. I used the slow cooker method and had lots of meat for lots of recipes. Some other uses besides chimis would be baked chimis (brush butter on folded tortillas and bake until golden), burritos, tamales, taquitos, etc.
We love this at our house. I will use a combination of beef and pork and roast if for about 3 to 4 hours at 325, so it doesn't take as long. I also use canola oil instead of shortening. You find that you can't keep your fingers out of this while you are mixing all the ingredients together. Yum-Yum!
I have the exact book, from my mother too. I love this recipe. I also like making it with chicken as well. I thought it was perfect but this last time I add some sweet corn blended up into the mixture (like Don Miguels freezer stuff). Oh that was it!

Wow is this good. I couldn't believe how tasty just the meat was with NO seasoning. I didn't have green chili sauce so I used Rotel, increased the garlic powder and decreased the salt. Can't wait for supper. Gloria

This recipe is great. When I make this recipe there is so much left over, and my husband comes home for the next week telling me to make him chimichangas. I wish I knew how to make more mexican dishes for my mexican husband. TY for this recipe.
This is also one of my "tried and true". I make this every few months using either beef or pork depending on what I have on hand, then make chimichangas or burritos with it. At this very moment my meat is cooking away for a new batch so I thought I'd take a look and see if anyone had posted this yet...lo and behold here it is! Very convenient and delicious - give it a try!
