  1. Mix all ingredients and chill several hours (preferably overnight). Serve with tortilla chips. (Also a great topping for fish, etc.).

We really enjoyed this, it didn't last long! Ripe, good quality mango and tomato really make a difference in flavor. Added a bit of salt and served with chips. Thanks for sharing the recipe! Made for PAC Spring 2009.

Yummy and easy. I had some mangoes that needed to be used, so I made this as part of our Cinco de Mayo celebration. :)
