This is just something I made up one day after having my husband's enchiladas so I decided to try it as a lazagna.

  1. Brown ground beef along with the onion, green pepper, garlic and olives. Drain thoroughly.
  2. Ladle a small amount of Enchilada sauce on the bottom of a 9X13 baking dish. Layer in the corn tortillas making sure they overlap. Add 1/3 of the beef mixture and spread evenly.
  3. Add another ladle of Enchilada sauce to the top of the beef. Cover with a layer of cheese.
  4. Repeat the layering process of tortilla, beef, sauce and cheese 2 more times.
  5. On the last layer add a thicker layer of cheese and top with the remaining olives.
  6. Bake at 350 degrees for about 20-30 minutes or until the edges are crispy and hot through the middle.
