Good. A nice healthy dinner that's quick to fix. My son enjoyed it which is rare. We found, though, that it needed some spicing up. I would use salsa instead of canned tomatoes next time. Thanks for sharing!

Agreed, a good Mexican flavor made healthier with corn and low-fat cheese blend. I used fire-roasted crushed tomatoes and 1/4 teaspoon chipotle powder for a smokey flavor. Served with low-fat yogurt instead of the fat-free sour cream (yogurt just tastes a lot better) and lots of hot sauce on the side. Also, this held together quite well (after letting it stand for a couple of minutes). Nice recipe! Thanks.

We liked this recipe, but found it lacking in flavor (I added hot sauce and cilantro at the end, but it still needed something more). Thank you though for the recipe.

didn't have the right size dish, so it came out flatter but still good. used can corn instead and rotel tomatoes and chiles. a little too hot for me with the rotel, but my bf liked it

Simple to make, excellent blend of ingredients, very tasty. It had a tad of a sweet taste, I don't know what it was from, but it was delightful. Delicious! And you feel good just knowing how healthy it is. Thank you for the recipe!

Now this is what I'm talking about!! All the flavor that we love without all of the fat that loves us! In used tomatoes with green chilis added so I could try and hide them from my DD. I loved that it has so much flavor and you don't miss not haveing meat. I followed another reviewer's advice and let it sit a few minutes and had no problems with it falling apart. We will be making this again. Thanks for posting!!!

This was much better than expected. I used it as a side dish with mexican seasoned grilled chicken breast. This dish alone would be great for lunch, but I found it not filling enough for dinner. I will definitely have this again! PS: I used the entire 8 oz pkg of reduced fat cheese and substituted 1-1/2 cans rotel for the diced tomatoes and canned chilies. The rest of the rotel went on top of the chicken breasts. Very good.
