An omelet with a bit of a spice to it!
- "Grate"in a blender, cook in skillet,& fold into omelet.
Wanted something a little different than just a plain omelette, but pantry items were slim. Found this recipe and it was simply wonderful. I mixed the eggs, milk, salt and pepper and made into an omelette, and just before folding, I grated the peppery montery jack cheese over the omelette, folded it, slid it onto the plate, them grated a little more of the cheese on top. As you can see by the picture, I served with fresh grown tomatoes, and it hit the spot. The bite of the pepper jack cheese made all the difference.
