this is really good. it's turned into our sunday morning meal. i didn't use the chiles, but i'm sure it would have made things better. i don't think the cornstarch is necessary either. the moisture cooks off if you give it a chance. good recipe overall.

I've never eaten these in a restaurant but made them today for breakfast and thought they were very good. Even the DH enjoyed them. But I didn't do them as a cassorole. I fried the tortillas, made the ranchero stuff, fried the egg, put it on top of the tortilla, then added the rachero sause, and the cheese. Really very tasty. I'll make it again.
