Mexican Hot Corn

"This is a great snack available in front of Mexican grocery stores in our area. Another variant is to sautee frozen corn nibblets with all of the ingredients and peppers."

ingredients

• 4 ear corn, boiled or grilled
• melted butter
• mayonnaise
• chili powder or cayenne pepper
• parmesan cheese

directions

1. Brush corn with melted butter, then mayonnaise, then sprinkle on chili and cheese.

This was so tasty! I was looking for a recipe for cheesy corn and this one was pretty close to something I had a few years ago at a Thanksgiving feast. In addition to the chili powder I added 1 tbsp cumin and 1 (heavy) tsp mexican oregano and it was a hit at the party! Oh, and I tossed in about 1/4 c of sour cream I had left over. So yum! We will definitely make again because it is quick, easy and pleases adults and kids

oh wow!! the only place i've ever seen this corn is at our town's city picnic once a year. tonight i threw in a bag of frozen corn in a pot and added all the other ingrediants one at a time to taste. My family ADORED this!! Thanks for sharing this recipe!

This brings back great memories... I love this snack!!! We visited a large farmer's market and out front, a man was selling this tasty treat... It is so good with grilled corn... We love it with all the fixin's!!! I tried it with the frozen and while it is good... can't wait until the sweet summer corn is around again!

I am sure it will be even better with fresh corn on the cob this summer, but I used frozen white and yellow corn and we loved it!! I caught my husband eating more out of the pan after dinner. Great side dish for Mexican food!
