  • Brown ground beef and onion and drain excess fat.
  • Rinse quinoa.
  • Add tomatoes, chilies, quinoa, water and spices to ground beef and simmer, uncovered, for about 25 minutes.
  • If water evaporates, cover pan for remainder of cooking time.

  1. So easy and so delish! I didn't have cumin or chili powder, so I added a packet of McCormick's taco seasoning instead. I also opted for ground turkey breast instead of ground beef. Served it with sour cream and grated cheddar on top, and a piece of cornbread on the side. Yummy!
     
  2. Using the suggestions by other reviewers, I felt comfortable making some changes. I used leftover quinoa from another recipe so I didn't add as much water as the recipe listed. I also added a small can of rotel style tomatoes and a can of green chilis. Ground turkey was my protein. I also added a package of taco seasoning with the cumin. This is wonderful! It was fast to prepare, the flavor was great, and it makes very good leftovers.
     
  3. Wanted to use up quinoa and ground beef. This is a great base recipe. Next time I will add some veggies (bell pepper, corn, etc). It looks a little plain, needs some color!! Would be great served with tortilla chips.
     
  4. This worked well for me as a quick side dish with taquitos. I desperately needed a quick extra item that was tasty and this was just great. I had all the ingredients needed in the house without needing to run to the store. Since no one had ever heard of a Mexican Quinoa it was an excellent topic of conversation on how I could have been so creative. Thank You!
     
  5. Delicious!! I made this for dinner tonight. Made exactly as written except i also added a couple dashes of garlic powder. Don't even know that it made a huge difference. I also noticed that the ingredients list doesn't mention chilies, but the directions do, so I just added a can of chopped green chilies. Hubby and I loved it and ate it topped with sour cream, cheese and salsa! Hubby added crushed red pepper to his too cause he likes things spicy. Tomorrow with the leftovers I'll wrap it in a tortilla for lunch! Overall a good easy recipe :)

Tweaks

  1. Great recipe. A few alternations to make it more flavourful. I substituted beef broth for the water, added half a teaspoon of Chilli Pepper, 2 tablespoons of brown sugar to add a nice sweet kick, and 2 tablespoons of Franks Red Hot sauce. Like others have mentioned, I also served it with sour cream and cheddar cheese.
     
  2. This was a good way to use up the Quinoa we had in the pantry from another recipe. It was easy to make, and I followed the recipe exactly (except I used a can of rotel instead of plain diced tomatoes). My biggest issue was that I felt this recipe was too bland for our taste- we had to sprinkle some taco seasoning on top, and it could have used some Cholula hot sauce (unfortunately we didn't have any on hand). Next time I will double (at least) the seasonings and probably throw a couple dashes of Cholula in when I combine everything to simmer. Overall, it's a good recipe, and my husband has already stated he wants to add it to our dining repertoire. thanks for sharing.

  4. This was a great last-minute dinner recipe. Like Bobbin, I didn't add chilies (and, in fact substituted about 1/8 teaspoon chili pepper and a dash of red pepper flakes for the chili powder) and my kids all ate it. I also substituted diced steak meat in place of the ground beef, just because I needed to use it up. It tasted good, it was a complete meal almost by itself (we ate it on tortillas with grated cheese and sour cream), and it is SUPER quick and easy! Thanks for the recipe!
     
  5. We loved this recipe. Even my 10 month old liked it. I topped ours with a little cheddar cheese and a dollop of sour cream. I did not add chilies since I was making it for kids and the it was perfect. The flavor was great without the extra kick of heat. Oh, and I substituted ground turkey for beef. I will make again!

I have two boys Eddie 18 and Brandon 10. I have been with my hubby for 16 years. I work full time outside the home and my boys keep me busy at home.
