- 2 (481.94 g) box corn muffin mix
- 2 eggs
- 340.19 g can Mexican-style corn, drained (with peppers)
- 59.14 ml vegetable oil
- 2.46 ml lemon juice
- 59.14 ml milk
- 2.46 ml ground nutmeg
- 177.44 ml shredded sharp cheddar cheese
directions
- Preheat oven to 375°F Grease a large muffin pan, or use paper liners.
- Mix all ingredients together, blending well.
- Pour into muffin pan (liners) and fill about 1/2 full.
- Bake for 22-28 minutes.
