Mexican Corn Bread

I got this recipe from one of DH's family member's cookbook. It sound weird, but was easy and tasted great. I used a 4 ounce can of chopped green chilis instead of the green bell pepper, egg substitute and low fat cottage cheese and low fat sharp cheese.

  1. Preheat oven to 350 degrees.
  2. Spray 11x7 pan with cooking spray.
  3. In a large bowl mix all ingredients together until well mixed.
  4. Pour into prepared pan.
  5. Bake for 1 hour.
  6. Serve warm with butter.
