This is a simple slaw that is a very tasty side to Mexican dishes or even inside a taco. Easily tweeked to suit any tastes. From Eating Well website.

The slaw is very fresh tasting but needed a tweak. I made as suggested & served with dinner. IMO it was lacking something. After dinner, I added more olive oil, salt & cilantro. Let it marinate over night, and it was much better at lunch time. I would suggest making it well in advance (12+hours) as it seems to improve in flavor after time and was still crisp. If you like cilantro, add more than suggested. Thanks for posting DDW, a great side with any Mexican meal.

  1. Wisk cilantro, vinegar, oil and salt in a large bowl.
  2. Add cabbage and toss well to coat.
  3. Serve.
