Yummy. So easy but I forgot the pepper because it is not in the instructions but I did add it for DD (toddler) after realizing. I didn't feel it needed salt with the cheese I used which was a different variety I grated so I didn't add any. DD enjoyed this with rice crackers for a snack/meal.

We loved this! It is quick and easy too...perfect when you are in a hurry. This would also make a great lunch by adding a variety of meats, vegetables and cheeses. The possibilities are unlimited. Thanks for another winner, faith.

Such a simple little recipe, your daughter has great ideas! I made this using Canadian cheddar, I followed the instructions as written. I sprinkled a few bits of chives and additional cheese over top, then decided to add some real bacon bits too!! I will make this again using some Havarti with hot pepper cheese, yummy!!! Decorated for Bergy's - April Showers Bring May Flowers!!

Mexican Cheese Omelet
