Mexican Casserole

"This Mexican style casserole is fairly healthy and really easy to throw together. I prepare it using a vegetarian version of ground beef, but I'm sure that it will also work well with any type of ground meat."

  • 12 ounces vegetarian ground beef (I use Morning Star Farms "Meal Starters")
  • 2 cups cooked brown rice
  • 2 cups mixed vegetables (defrosted)
  • 1 (1 1/2 ounce) packet burrito seasoning mix
  • 16 ounces salsa
  • 1 (10 ounce) can light cream soup (anything)
  • 1 cup light shredded cheddar cheese

directions

  • Heat the oven to 350.
  • 1. Mix all of the ingredients together (except the cheese)
  • 2. Pour into a sprayed casserole dish.
  • 3. If the dish looks a bit too dry for you add a bit of broth or some more salsa.
  • 4. Cover with the cheese.
  • 5. Cover the dish and cook for about 40 minutes then uncover it and cook it for another 15 minutes or so.
  • I serve this topped with lettuce, light sour cream, hot sauce and salsa (like a salad on top of the casserole).

  1. This is delicious! I made it for a friend's birthday - she eats meat and so do my husband and I, but her boyfriend is a vegetarian. I used cheddar cheese soup and Safeway garlic lovers salsa and it was AMAZING! Thanks for a great, quick, easy and delicious recipe. :)
