  • Preheat oven to 350.
  • In 9X13" baking dish, layer in order: 1 lb uncooked ground beef.
  • 6 corn tortillas.
  • 1 can ranch style beans with jalapenos.
  • 1 med onion chopped.
  • 1/2 pound cheddar cheese.
  • 6 corn tortillas.
  • 1 can cream of chicken soup.
  • 1 can rotel tomatoes.
  • Bake for 45 minutes.

  1. I was about to post this recipe myself! We love it, My husband always looks forward to the leftovers to take to work for his lunch. My only changes, I brown my ground beef and onion together so I can drain off any extra fat, and before I pour on the soup, I mix it with the rotel and top with a bit of cheese. This has a very attractive presentation and is so simple to assemble. YOu can alter the spiciness using different kinds of the rotel too.
