I made this exactly as stated in the recipe and it was very tasty. Kids came home and grabbed a bowl and everyone said it was a "do again" recipe. I had friends over for drinks later and they sprayed a cookie sheet with non-stick spray, placed corn tortillas on pan and topped with filling and put cheese on top. Topped with sour cream after taking out of the oven and was delicious. They weren't baking fast enough for everyone. It's great to find a recipe that's versatile.

I made this for supper tonight, cut up the pepper and onion before I left for work. Truly took 30 minutes to make. I used ground turkey, skipped the jalape?o pepper (hubby & I like them, kids...not so much). Also didn't add corn or peas, thought there was enough starch with the rice (used brown minute rice). Also used much less cheese, about half cup, and then sprinkled a little over each serving. Everyone loved it - definitely a make again meal.

I made this for dinner today. I didn't have minute rice, I used brown rice and precooked it for 30 minutes. I also didn't have zucchini and I subbed 2 cups kidney beans.It went together quick and easy, as I had pre chopped onions and green peppers in the freezer.We really enjoyed this as it was quite tasty. Definitely a keeper. Thanks.

I made this a couple of weeks ago. I left out the zucchini and cheese. It was awesome! I had two bowls. I will make it a favorite!

This was great! We rolled it up in tortillas and my kids never knew they were eating zucchini! Very tasty, will make again. I did cut back on the black pepper a bit and used hatch chile instead of jalapeno. Also I added a small can of tomato sauce for more moisture as my rice took longer to cook (it was regular and not minute rice). But the extra tomato flavor was nice so I would do that again. I could see adding pinto or black beans next time.

So tasty! I left out a few items since I didn't have them (zucchini, peas, half a jalapeno) - didn't even miss it. I also added more rice because I felt it needed more. We wrapped it in tortillas topped with sour cream. Husband and I loved it - I will definitely be making this again!

SOOO Yummy! We left out the jalapeno and used petite tomatoes instead of stewed. I also used homemade taco seasoning. It was one of the best meals we have had lately. Everyone had seconds, including my 6-year-old daughter (and that speaks volumes!). We would have all that thirds if there had been anything left. Most definitely a keeper!

Very good flavor! Not a fancy dish, but it comes together quickly, especially as I had chopped peppers and onions in the freezer. I cut the recipe in half for the two of us, and it still made a good 4 servings. (Leftovers!) I cooked regular rice on the side, then added at the end. 1/2 cup dry rice was almost too much in my opinion; next time I'll use less rice but just as much seasoning. I did add more cumin and SMOKED paprika, which makes it awesome!

Yet another winner, Kittencal! My whole (extended) family loves it. We've had it twice now in as many weeks. I can really appreciate a one skillet meal that goes together so quickly. The second time I used instant brown rice and we think we like it a tiny bit better. Thanks for another staple!
