  • Wash and drain salad leaves.
  • Finely slice red capsicum.
  • Shaved carrot.
  • Chop spring onion.
  • Cut tomatoes into wedges.
  • Toss all ingredients with the salad leaves in a bowl.

  1. This was a very healthy and tasty salad. And it's quite pretty, too. I found that it does need a dressing for my personal taste so used a raspberry vinaigrette and that complimented it quite well. Made for PAC 2008.
