  1. Wash and drain salad leaves.
  2. Finely slice red capsicum.
  3. Shaved carrot.
  4. Chop spring onion.
  5. Cut tomatoes into wedges.
  6. Toss all ingredients with the salad leaves in a bowl.

This was a very healthy and tasty salad. And it's quite pretty, too. I found that it does need a dressing for my personal taste so used a raspberry vinaigrette and that complimented it quite well. Made for PAC 2008.
