I always make this salad for winter holiday gatherings. It comes from "Quick Cooking" magazine. The salad is beautiful and incredibly yummy! There is always way too much dressing so I usually double or triple the salad amount depending on the crowd.

  1. Toss salad ingredients in a bowl to combine.
  2. In a blender, process the dressing ingredients until smooth. (The color of the dressing is amazing!).
  3. Drizzle salad with dressing just before serving.

Simply FABULOUS! This dressing is out of this world crazy good! I halved the salad greens & parmesan cheese, used all the fruits & nuts for 5 adults. I made all the dressing but used only 1/2 C of canola oil. It does makes a lot. It was perfect in every way! Our guests gobbled it up and came back for seconds. I'll bet this would be good with goat cheese as well. YUM! Thanks a bunch Slatts!
