Men's Health Southwest Sloppy Joes

- 1 tablespoon vegetable oil
- 1 medium red onion, diced
- 1⁄2 cup celery, diced
- 1 teaspoon ginger puree
- 1 teaspoon minced jalapeno
- 1 lb ground pork
- 1⁄2 cup diced canned tomato
- 1⁄2 cup barbecue sauce
- 1 ounce jim bean whiskey
- 1 tablespoon soy sauce
- 1 1⁄2 tablespoons lime juice
- 4 -6 sandwich buns
- 8 -12 iceburg lettuce leaves
- 4 -6 tablespoons guacamole
directions
- Heat a large saucepan over high heat. Add the oil and swirl to coat. Add the onions, celery, ginger, and jalapenos. Saute until soft, about 2 minutes.
- Add the pork and brown lightly.
- Add the tomatoes, barbecue sauce (I used Billy Bee), whiskey, soy sauce and lime juice. Bring to a simmer and cook stirring occasionally for 15-20 minutes or until mixture will mound sloppy-joe-style.
- Toast the rolls. On the bottom half, place a leaf of lettuce, then scoop on the pork mixture. Top with lettuce, guacamole, and the top half of the roll.
- Great with a pint of light beer.

My favourite cookbooks are Cottage Life's Summer Weekend Cookbook, Robin Hood's Baking Festival Cookbook and the old standard, the Joy of Cooking - all are reliable and excellent. My eyes have been opened to the simplicity and elegance of gourmet cooking through a few choice cookbooks, and a subscription to the Food Network Magazine. I love to cook and am trying to expand my recipe box repertoire. Zaar is my favourite cookbook by far. I love that I can lose a recipe and access it again and again. My computer has actually replaced my treasured recipe box. My absolute favourite thing about Recipezaar (beside no ads!) is the sense of community and togetherness between the members.
