I was skeptical....the goo that was in my saucepan didn't look very appetizing...but what came out of the oven was perfect & sooo delicious!!! The flavor is excellent. I used Beck's Dark because that's what I had & it worked wonderfully. Better than drinking it, imo. ;) Thanks, Sista.
Updated review. I tried this again after Kolibri made changes to the recipe and it was very good. Tastes like authentic Mexican Fundido.
This is so funny, DH thought I was nuts using his Leinenkugel Creamy Dark beer! It was wonderful! I also chopped up a fresh jalapeno for more heat and used fresh garlic! We served this with fresh veggies. Very very good!! Thank you SISTAH!!
This was my first try at a hot, cheesy dip but it won't be my last.Mexican blend and Monterey Jack cheeses aren't available here so I used gouda and parmagiana (only 1/4 cup of the latter). I found that stirring with a whisk was a lot more efficient than using a spoon to incorporate the cheese into the beer. The end result was great....I used all 4 cloves of garlic and about 3 tablespoons of chopped jalapenos.Served with vegetable sticks and corn chips #14578 - the guys are pigging in while I type.....one eye on the dip the other on the cricket!!
Not sure what went wrong...followed the 1st step and after about 15 minutes of stirring constantly all I had was a glob of melted cheese in beer. If anyone tries this and has the same result as I did, I would advise you to throw the glob in the trash and not the garbage disposal. It could gum up the disposal.
