I took Melt in Your Mouth Banana Bread from Mysterygirl and tweaked it to lower the sugar and fat. I also converted most of the flour to whole wheat. The results were outstanding.

  1. Preheat oven to 325.
  2. Mix oil, applesauce, egg whites and mashed bananas.
  3. Combine remaining ingredients and add to banana mixture.
  4. Spray 4 mini-loaf pans with Pam. Divide mixture equally between loaf pans.
  5. Bake for 45 minutes. This recipe can be used with two 9 x 5 x 3 loaf pans. Increase the bake time to an hour.
