The essence of melon flavor. I make this rather than Kool-Aid for kids. They always want to know where I got it. I use canteloupe more often than not. From The Complete Book of Mexican Cooking by Elizabeth Lambert Ortiz
- 1 cup melon seeds
- 1 cup sugar or 1 cup equal amount Splenda sugar substitute
- 1 lime, rind of, grated
- 6 cups water
- Place the melon seeds in a blender and pulverize as finely as possible.
- Combine the pulp, sugar, lime rinds and water in a large jug or bowl.
- Let sit for 4 hours.
- Strain through a cloth extracting all liquid possible.
- Drink and enjoy.
