Melon Agua Fresca

"We like our aguas frescas not too sweet, with less sugar and extra lime. This recipe is just right. If you have access to Gila melons (which are not harvested until they are perfectly ripe), use them. If the melon you have is not dead ripe and sweet, add more sugar to taste (one or two tablespoons extra). Add other ripe, soft fruits if you like, for a more complex flavor."

  • Place the melon and water in a blender or food processor and process until liquid (do it in batches if necessary). Strain the liquid through a fine sieve into a pitcher. Discard excess pulp. Add sugar and lime juice to the liquid and chill well before serving.
