Colorful mixture of garden fresh vegetables.
- 2 medium zucchini, trimmed
- 1 medium yellow squash, trimmed
- 2 large carrots, peeled
- 1⁄4 cup butter or 1⁄4 cup margarine
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 lemon, juice of
- Shred zucchini, yellow squash and carrots.
- Melt butter in skillet over medium high heat.
- Add vegetables and quickly saute, about 3 minutes.
- Add salt, pepper, and lemon juice and toss gently.
- Serve immediately.
