- 4 large tomatoes
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 1 eggplant
- 2 onions
- 2 tablespoons olive oil
- 3 garlic cloves
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 tablespoons balsamic vinegar
- 200 g orzo pasta
- 200 g tuna (canned)
directions
- roughly cube all vegetables.
- spray baking tray with olive oil and put veg in one layer.
- drizzle with balsamic vinegar & olive oil, crushed garlic,salt & pepper.
- Roast in hot oven appx. 10 minutes.
- Remove from tray and mix with flaked tuna.
- Serve over pasta.

Nice and simple recipe! Unfortunately, the instructions were lacking - what does this chef define as a 'hot' oven? I preheated mine to 200C (what I consider hot) but found my veggies needed closer to 25 minutes to get to point I wanted them cooked. Perhaps this was because my veggies were cubed bigger? Again, how large to chop the veg was not made clear. I think the recipe should also say to use cooked pasta - I know it's pretty obvious, but I do believe instructions have to be thorough, and that is my only caveat here. Having got past that, though, this recipe had great flavour and I really enjoyed it.

I am a widow-grandmother of 4- three girls and one boy. My birthday is 21.08.38 I live in the Galil-northern Israel.
