Directions

  1. roughly cube all vegetables.
  2. spray baking tray with olive oil and put veg in one layer.
  3. drizzle with balsamic vinegar & olive oil, crushed garlic,salt & pepper.
  4. Roast in hot oven appx. 10 minutes.
  5. Remove from tray and mix with flaked tuna.
  6. Serve over pasta.

Nice and simple recipe! Unfortunately, the instructions were lacking - what does this chef define as a 'hot' oven? I preheated mine to 200C (what I consider hot) but found my veggies needed closer to 25 minutes to get to point I wanted them cooked. Perhaps this was because my veggies were cubed bigger? Again, how large to chop the veg was not made clear. I think the recipe should also say to use cooked pasta - I know it's pretty obvious, but I do believe instructions have to be thorough, and that is my only caveat here. Having got past that, though, this recipe had great flavour and I really enjoyed it.

I am sorry, it was not an easy recipe for me to prepare. The instructions were too vague, no oven temperature and I was not familiar with grams. It was very bland, not much taste. I ended up adding some oregano and Parmesan cheese.
