Something I had cut out from the newspaper. Have not tried it yet but I am always on the lookout for vegetarian style dishes.

  1. Saute onion and zucchini in oil for 15 minutes.
  2. Transfer to baking dish.
  3. Sprinkle lightly with flour.
  4. Arrange tomato and capsicum on top.
  5. Bake uncovered at 200 degrees C for 20 minutes.
  6. Top with olives, basil and pine nuts.
  7. Bake further 10 minutes.
  8. Drizzle with vinegar before serving.
