Mediterranean Style Chicken Breast

ingredients
- 3 tablespoons extra virgin olive oil
- 3 -4 garlic cloves, chopped
- 1⁄2 jalapeno pepper, finely chopped
- 500 g chicken breasts, diced
- 1 tablespoon maple syrup
- 1⁄2 zucchini, diced
- 20 olives, black and green, chopped
- 2 tomatoes, peeled, seeded, coarsely chopped
- 2 tablespoons parsley, chopped
- 1 tablespoon sun-dried tomato pesto
- salt and pepper
directions
- Cook garlic, jalapeno and diced chicken in oil. Add maple syrup and cook another 2 to 3 minutes stirring constantly.
- Add zucchini, olives, tomatoes and simmer 8 to 10 minutes.
- Add parsley, pesto, salt and pepper. Finish cooking another 2 minutes. Serve on your choice of fresh pasta.

this was very good i made it for one and i assumed that meant one chicken breast<br/> i baked mine at 350 for 1 hour and 15 more minutes uncovered i didnt add water my chicken breasts seem to be half water when i cook them . i think it turned out great . dont worry about the maple syrup , you really dont taste it . i used bell peppers instead of hot peppers again fine for me really flavorul and you can bake 2 more chicken dishes at the same , just reheat .
