I enjoyed all the bright healthy ingredients and the terrific punch of flavor from the varied blend of flavors. I did use the entire cup of sun dried tomatoes, as it was a little too costly, but I was very satisfied with 1/2 a cup. I really think this dish only needs 1 cup of the rice, the two cups made a HUGE amount and seemed to diminish the other lovely ingredients. I made some extra chicken and served the extra chicken to my hubby to make this a main dish.
Every bite is a surprise! This is very festive and colorful. Full of healthy goodness. Ingredients state shallot but directions state onion. The ingredients would be nice if written in order as they are used. The nutritional facts are not correct for the fat is not calculated in. This needs more then a spray of oil to coat the rice so I did add additional. I did saute the mushrooms along with the onions. This is an expensive dish for the tomatoes were $5.00, the pine nuts along with the saffron.... The pumpkin should have a lite coating of oil so it doesn`t stick to the pan. This makes a lot. As a side it would fill at least 10! For the main meal it can feed at least 6. I opted to skip the optional chicken breast. I used 3 cups of fresh chopped spinach. I did use the optional cheese.
