I served this chilled and it worked really well with the flavors developing. I also used brown rice because it is what I keep in the house and like Evelyn I went for dried oregano. Made for ZWT4.
This was excellent and very tangy! The fresh oregano is a nice touch. We used brown rice, half the cheese, just a tablespoon of the oil and a mix of Kalamata and Manzanilla olives (which were great in it). I omitted the salt and had to leave out the spinach, since it was all finished at the last minute - but honestly I don't think it needed it. The two of us easily at this as a meal, but I think it would be great as a picnic side dish.
Good salad definitely! I found the cooking time on the rice didn't match my stove, but no mind, next time will cook rice as I usually do. I also think next time I will slice the spinach or tear it into pieces. I'm keeping this one though. Thanks for your recipe!!!

A delicious and very pretty accompaniment to our salmon dinner tonight. I used dried oregano as I prefer it to fresh (more flavour - seriously), and kept everything else as is but scaled down to half. Can't fault this recipe in any way - it's good!
Simply delicious. It made a perfect lunch with some mushrooms. Very simple and quick to make. I enjoyed it still warm - just above room temp but it will be great cold as the weather heats up. I'll look forward to having this again.
Another ter-ruff-ic recipe from cookiedog! This salad is unbelievably wonderful! The flavors, the texture, the colors...just everything about it...I LOVE it! I will be making this for potlucks and it would be beautiful for a Christmas get together...red, white and green. I followed the recipe exactly. The only change I might try is to add less oil. I served this with cookiedog's Roast Lemon-Garlic Chicken With Green Olives and it was a meal fit for company or a King. Thank you so much for another keeper recipe cookiedog!
