  • 1. Adjust oven rack to middle position. Heat oven to 350 degrees.
  • 2. In a small bowl, mix sour cream, yogurt, cucumber,lemon juice, 2 minced garlic clove, feta, pepper to taste;.
  • 3. Wrap pitas in foil and Place in oven; bake until warm and pliable, 5 minutes. Cut in half.
  • 4. Meanwhile, heat oil in a large skillet over high heat saute onion until golden brown. Add meat, oregano and remaining minced garlic; continue to saute for about 2 minutes.
  • To serve first fill pitas with lettuce, followed by meat, tomatoes and cucumber sauce.

I did not have garlic so I substituted garlic powder in the sauce, and I cooked the chicken in olive oil sprinkled with lemon pepper sauce. I shredded the cucumber in a food processor then dried it in paper towels. I recommend this recipe!
     
  2. Made for spring 2010 PAC This is a 5+++ recipe. I'll start with the tsatziki sauce. It was fabulous!! The addition of the sour cream to the yogurt really allowed the other flavors to shine through. I have made this sauce before and found the pure yogurt to really make it too tart for my taste. NEXT, the use of chicken instead of traditional Gyros meat. I LOVE Gyros, but I don't make them because ground lamb is so hard to find. And I love chicken. The use of chicken wasn't meant by the chef to replace Gyro Meat, she doesn't call this a Gyro. The chicken made this lighter and certainly lower in fat. I didn't feel like I was missing a thing. I used greek pitas which are heated and folded around the filling, instead of split and filled. You really need to try this.
