Yummy, hearty veggie meal! Barely fit my sauce pan too! I do think it needed more salt for me and I think I will put some cheese in it tomorrow for lunch, but all in all I can see making this again. Thanks for the recipe.

Wow! This was really good. I used spinach cous cous, red onion, red and yellow peppers (what I had on hand) and added some salt. It was FANTASTIC! The recipe make ALOT... it filled my 12 inch skillet to the rim! I would say this recipe makes 8-10 servings. Thanks for posting!

This was awesome with chicken. A great mix of flavors. It was a new taste to our family, and we all loved it!

We had leftover couscous that we wanted to use, and this was great for it! I used half the couscous, I used four fresh tomatoes instead of canned, and I didn't have the peppers/capsicum, but it was still delicious. We also added a dash of salt and some freshly ground pepper. Thanks for posting this recipe.

This was very delicious. Refreshingly different than most couscous dishes I've been acquainted with. The flavors were well blended and perfectly matched. We really enjoyed this and I just know I'm going to enjoy it even more for lunch tomorrow!! Thanks for posting a definate winner.
