- 1 head cauliflower, cut into florets
- 59.14 ml red bell pepper, chopped
- 29.58 ml fresh parsley, chopped
- 59.14 ml Greek olive
- 14.79 ml capers
- 14.79 ml wine vinegar
- 44.37 ml olive oil
- 2.46 ml dried oregano
- salt and pepper, to taste
directions
- Steam cauliflower florets until just tender.
- Refresh under cold water to stop the cooking process.
- In a bowl, combine cauliflower, pepper, parsley, olives and capers, toss lightly.
- Whisk together the vinegar, oil and oregano and pour over vegetables.
- Marinate in the refrigerator for two hours or even overnight.
- Serve cold.
