I was on Ediets a few years ago and this was the first recipe that I tried. It is delicious and healthy. When my husband and I sat down to our first Ediet meal,we did not know what to expect. What a great surprise and certainly made the diet easy to follow! It has great presentation and does not look nor taste like diet food. Great for vegetarians! Hope you enjoy!

  1. Microwave frozen corn for 2-3 minutes on high, covered.
  2. Stir and let sit for one minute, then drain.
  3. Combine all salad ingredients in a bowl.
  4. Whisk olive oil, vinegar and pepper in a small bowl.
  5. Pour dressing over salad ingredient and toss well.
  6. Garnish with cheese before serving.

Ok salad. Not bad, just didn't wow me with flavors. I think I'd like it more as a side dish then as a main dish. Thanks for posting!

This salad is filled with all types of wonderful veggies. What a pleasing way to up your consumption of vegetables. Don't leave out the garlic it is a must. Initially, I had forgotten the garlic, tasted the salad, then realized my mistake. Also, I topped the salad with a few grinds of fresh pepper. Nice light meal!
