- 3⁄4 lb grouper fillet
- salt and pepper
- 2 teaspoons olive oil
- 2 tablespoons pine nuts
- 6 green olives, pitted and cut in half
- 1⁄2 cup pimiento, drained and sliced

- Preheat oven to 400 degrees F. Line a baking sheet with aluminium foil. Rinse groupe and pat dry with paper towel. Sprinkle fish with salt and pepper to taste. Place on prepared baking sheet and drizzle oil on top. Bake 10 minutes. Spoon pine nuts, olives, and pimiento over fish. Return to oven for 10 minutes.
