UPDATE, 11-25-15: When I first made these, I sampled them right out of the oven, while they were still warm, and I felt like they really had very little taste..They were VERY neutral. But, since texture was good, I just cut them into individual bars, wrapped them, and popped them into the freezer. I went back 2 days later and defrosted one by leaving it out on the counter, and when I tasted it, WOW.. They DID have a very Carrot Cake taste! Delicious! So, I need to update this review to say they were VERY tasty after being frozen and defrosted! I dont know if the freezing process made any difference; they may have tasted just as good if I had simply allowed them to cool.. But all I know is, I will DEFINITELY be making these again.. and if I decide to use the recipe as a neutral base, I will definitely need to leave out the carrots and the spices, because like I said, they really have a lovely carrot cake taste! I will be eating these long after I reach my goals and go into maintenance mode.. this recipe is a keeper! These are so good, I would make them for company! Thank You! Original Review: I made this as directed, and I found it to be a good BASE .. but it basically had no taste. I wasnt expecting a taste thrill, as these are healthy protien bars, not brownies .. but they didnt taste like vanilla, or carrots, or oats, or anything.. they were just like a neutral, zero taate vehicle. So, in a way, thats a good thing, because now I know that if I add an extract, like banana or almond, etc, these bars could really be something. I could easily see using banana extract, and baking this up in a muffin pan, and topping each muffin with a walnut half, etc.. but even simply cutting them into bars would be awesome if they had *some* sort of flavor. I think I will start out with a tablespoon of banana flavored extract, and a bit more sweetener (I used splenda for baking.. and the bars had just the barest hint of sweetness.. almost to the point of having zero sweetness at all..) and I think the result will be a mildly sweet banana flavored bar. The texture was great, so once I can impart some flavor, this will be a great "base" recipe that I can turn to and use to make endless varieties of bars based on the flavored extracts I use.

I used this recipe to adapt my own protein bar based on what I had on hand. It turned out great, thank you so much. I did not use stevia, as my protein was vanilla flavored. I used whole eggs, and added flaxmeal and applesauce, and coconut flour. Yum, thanks.
