Meatloaf With Raisins & Apricots

Here's a slightly different twist to meatloaf, especially if you like a fruity flavor!

  1. Preheat the oven to 350 degrees F.
  2. Combine beef, pork, eggs, bread crumbs, salt & pepper & mixe well.
  3. On a large piece of heavy duty foil, spread the meat mixture into a rectangle about 1/2 inch thick.
  4. Thoroughly mix the remaining ingredients & spread this fruit mixture over the meat mixture.
  5. Roll up the meat & filling like a jellyroll, then bring the foil up & over the loaf, sealing it well on the top & sides.
  6. Bake for 30 minutes on a baking sheet, then open the foil to brown, baking the loaf another 30 minutes.

I made this for my DS as a take-home meal, I had a bit of problems rolling up the meat mixture, I might use dry breadcrumbs next time in place of the soft, I think that would have made the rolling easier, I also did some amount adjustments, all in all this got 2 thumbs up from my DS! thanks for sharing Syd...Kitten

I made this tonight for my family (hubby and 5 kids under the age of 10). The kids loved the raisins and apricots in it. Hubby said it was "different" but good in its own way. When I mixed the raisins, apricots, parsley, onions, sage, thyme, and beef broth the mixture was very runny and when I spread it over the meat mixture the beef broth part just ran over the edges and made sort of a mess. Next time I would just mix the herbs and fruit then maybe just pour the broth over the top of the loaf... maybe that would make it juicier too. I will definately make again since I have never been able to get my kids to eat meatloaf.
