Meatloaf
- 1 large onion, minced
- 2 garlic cloves, finely chopped
- 2 tablespoons olive oil
- 1 lb ground pork (lean)
- 1 lb ground beef (87 -90% lean)
- 1 3⁄4 cups breadcrumbs, unflavored
- 2 large eggs
- 1⁄2 cup 1% low-fat milk
- 1 teaspoon salt
- 3⁄4 teaspoon cracked black pepper
- 4 tablespoons ketchup

Glaze
- 2 tablespoons dark brown sugar
- 4 tablespoons cider vinegar
- 4 tablespoons ketchup
directions
- In a small skillet, heat olive oil to saute onions until slightly golden. Then add the garlic and continue to saute for 1 to 2 minutes longer. Cool slightly.
- In a bowl combine the milk, eggs, salt, pepper, and ketchup mix well. Add the bread crumbs, mix, Add the beef, pork, and onions mix well (hands work best). Place into a loaf baking dish removing any air pockets.
- In a small bowl mix the glaze ingredients and pour over the meatloaf.
- Bake in a 350 degree oven for 60 to 75 minutes.
- Remove when internal temperature is 155 degrees.
- Let stand 15 minutes prior to serving.

This was really good and since I used ground turkey - it had enough seasoning to be tasty and not bland. The only thing I forgot to do (maybe it was my fault because a friend came in & I continued working on this recipe) but at no point did the recipe say when to add the sauteed onion and garlic to the meatloaf, so needless to say, I pulled the meatloaf from the oven and put the onion/garlic mixture on top which was delicious!
