I have been making this recipe for a few years now. It is the best! We love the combo of the sour cream and mashed potatoes, sort of like twice baked potato tasting. The corn is a nice surprise with every bite. Truly a comfort food dinner. We enjoy this as a one dish meal, it already has the veggies incorporated... I make it as posted, but I always use leftover REAL mashed potatoes, so much better. Thank you for such a gem of a recipe!!!
Easy to make. The potato mixture was so good that I'm going to use it the next time I serve mashed potatoes. Great comfort food!
This is my favorite Shepherd's Pie recipe. I make it with sliced meatloaf as recommended. The sour cream/potato mixture really accents this recipe and makes it unique. I will never try another recipe for this pie. This one beats other recipes hands down! Thank you so much for sharing...
Unbelievable! I made this the other night for dinner, using leftover meatloaf that I had in the freezer. You would think I had just discovered white bread! My family went crazy over this. Definitely going to make this over and over!

I always wanted learn how to make Sheperd's Pie. This recipe was incredibly easy and tasted delicious! Loved it and will keep making it. I used all my leftovers so really there wasn't anything to buy. Even the kids and husband thought it was great!

I just have to say thanks for posting this recipe. A few months ago, I made one of the meatloafs posted on Recipezaar...and it turned out really bad. It was really soggy & sweet. That night, we couldn't even eat it but I put it in the freezer JUST IN CASE it was salvageable. Then I found this recipe in Trish's cookbook, "My Meat Loafs if I Don't Use It!" I made it for lunch and it saved the "failed meatloaf" (as my husband puts it...). As for the ingredients & measurements, I just eyeballed how much of each ingredient I wanted. I used leftover frozen mashed potatoes (that I defrosted), frozen corn, and a cheddar cheese mix that I ALSO had in the freezer. As for the gravy, I just boiled water, added some beef bouillon and then some cornstarch...easy & tasty (It helped cut out a lot of the sweetness from the meatloaf.) I managed to get 2 9x5 casserole dishes out of this.
Oh so good. I used leftover meatloaf and broke it up into pieces like other reviewers mentioned. I opted to use carrots instead of corn, because that's how I like my shepard's pie. I cooked the carrots a bit before putting them into the dish with the other ingredients, about 8 minutes in the microwave. I used instant mashed potatoes becuase mine had gone funky in the pantry and it was too cold any rainy to go out and get new ones. It was good with instant, but must be great with real mashed potatoes.
Thanks for a great way to use my leftover meatloaf. I did make a couple of changes. I broke up the meatloaf and I mixed creamed corn with my whole kernal corn. I also only used 2 good sized chunks of meatloaf. This was moist and easy to put together!
