Very moist and delicious. I did add some bell pepper just due to I like bell pepper in my meatloaf. My dh even said it was delicious. Thank you for the recipe, we will be making it again.
This is a delicious and easy recipe. I used salsa instead of catsup, and oatmeal instead of bread crumbs which helps up the fiber content. I only used one egg, also. Thank you for such an inspirational recipe.
Mine are just out of the oven and I couldn't resist scoffing one. : )) To my surprise, with such simple ingredients, they are delicious. I doubled the recipe planning to freeze some; used dried parsley - just a tablespoonful - and I know this will be a hit tonight. Oh and I didn't have parchment so I just sprayed the patty tins. My plans for freezing a meal look like they have gone astray...Thanks!
Delicious! I made mine in jumbo muffin tins lined with large paper muffin liners, and that worked out well. The only thing I did differently was added in some half and half cream (for a softer texture) and 1 heaping tbsp minced garlic. I baked mine for 40 minutes, as they were quite large. This is a fast, simple and very tasty recipe for ground beef, we really enjoyed them with mashed potatoes and salad. Marg, thanks for another tasty recipe! ....Kitten:)
FAST, EASY AND YUMMY!!! There a lot of meatloaf recipies, but this one stands out because cooking time is soooo short and the flavor is awsome!
We liked this recipe for meatloaf. I am not a huge meatloaf fan, but DH is.......I will make it again for him.
These were fabulous! Made to recipe except I added a bit of green bell peper and left out the parsley. Will definately make again.
I actually cooked these up for the freezer omitting the BBQ glaze. Love the idea to use an icecream scoop. Defrosted some and heated in the microwave for a fast dinner last night and turned out very successful. Thanks for another great recipe CountryLady!
This was the best tasting and easiest meatloaf I've ever made CL! I cut the recipe down to only make 8 "muffins" but now after tasting them I wish I would have made them all so that I could have frozen some of them. My only change was to place the meat in cupcake liners instead of using parchment paper. This worked perfectly! Easy to handle and hardly any mess to clean up. I did have to cook mine for 30 minutes to get to 160 degrees. Tasty recipe! We'll be making this time and time again :)
My pickly DD and I enjoyed these a great deal. I used about 1/3 cup BBQ sauce for the topping and I used dried onion flakes so DD wouldn't "see" the onion! I froze the leftovers. These will go into my regular rotation. Thanks, CountryLady
