Nothing fancy here, but a good idea for leftover meatloaf. If you love breakfast sandwiches, you will love this.

Ingredients Nutrition

  • 2 slices bread
  • your favorite leftover meatloaf
  • 1 egg
  • 2 slices American cheese (or your favorite other toppings (tomato, lettuce, bacon, pickles, whatever you like)

Directions

  1. Butter one side of each slice of bread.
  2. Place one slice of cheese on one of the unbuttered sides of the bread.
  3. Slice meatloaf into about 1/2 inch thick slices.
  4. Heat nonstick frypan and add meatloaf slices.
  5. Fry meatloaf until warmed through and slightly browned.
  6. Remove from pan and place on top of cheese.
  7. In same pan, fry the egg to your liking.
  8. (I like to break the yolk for sandwiches) Remove the egg from pan and place on top of meatloaf slices.
  9. Add the second slice of cheese on top of the egg.
  10. Put the remaining slice of bread, buttered side up, on top of cheese.
  11. Place sandwich in frying pan, and cook over medium heat until bottom piece of bread is nicely toasted.
  12. Carefully flip sandwich over, and cook, again until the bread is nicely toasted.
  13. Remove from pan, add any other toppings if you like, cut in half and enjoy!
