This is my mom's recipe and we loved it so much. You can use a mixture of ground beef, veal and pork if desired. This is a slightly different meatloaf, than what most people are familiar with. After they taste it, they ask for the recipe. This makes a great leftover fried meatloaf sandwich. (Just a note: If my Mom or I make the meatloaf, it falls apart, if my Dad makes it, it stays together...so good luck with yours!)
- 1 lb ground beef
- 1 egg, beaten
- 1 small onion, diced
- 1 tablespoon horseradish
- 1 tablespoon ketchup
- 1 tablespoon mustard
- 1 teaspoon sugar
- 1 1⁄2 teaspoons salt
- 2⁄3 cup milk, scalded
- 1 cup Ritz cracker, crushed
- Combine meat and egg in a large bowl .
- Mix all other ingredients with scalded milk.
- Add milk and meat together and mix well.
- Press into a greased loaf pan and bake at 350* for 1 hour.
5 Stars for taste, although my meatloaf did not hold together, either. This was exceptionally easy, yet very tasty; I was relieved it wasn't buried in ketchup and the horseradish did not overwhelm. I need to find my meatloaf pan with the drain on the bottom so the fat from the ground beef can drain off. Thanks for sharing your family secret! Made for Fall 2008 Pick-a-Chef.
