My friends and I really enjoyed this new twist on the traditional Meatloaf! We loved the combination of ingredients in the meatloaf, and the glaze on top really made it shine! I made Jasmine rice to have on the side along with some glazed carrots and Asian coleslaw. Very nice meal! Thank you for sharing with us! Made for My-3-Chefs 2008 Linda

  1. Preheat oven to 350°.
  2. In a big bowl, combine all the ingredients EXCEPT 2 cups of rice, the glaze, and the
  3. wasabi; mix well.
  4. Turn the mixture into a lightly oiled 9 x 5 inch loaf pan; gently pat down.
  5. Bake for 45 minutes; meanwhile make the glaze—in a small bowl, whisk the glaze ingredients together.
  6. Spread the glaze on top of the loaf and bake 15 more minutes, until the loaf is firm and the top is lightly browned and the sauce is bubbly.
  7. Let stand in the pan for 5-10 minutes before serving.
  8. Remove the loaf from the pan and slice to serve.
  9. Serve with the remaining rice and wasabi.
